We are convinced, that fine food is an essential aspect of our joie de vivre. A harmonic ensemble of fresh and local products as well as traditional and international cuisine is offered at Hotel Johanna. We pay attention to traditions and customs such as a Sunday’s-roast, which our ancestors already used to celebrate, our Friday’s – trout and of course granny’s recipes, which gives us inspiration for contemporary implementation of the Tyrolean and Austrian cuisine.

Friday’s trout

The trouts, which we offer for our à la carte and half-board menu, are from our own pond near the hotel in the middle of idyllic meadows. This place was called „kingdom of heaven“ – Can you imagine a better name for such a piece of paradise?

Our kingdom of heaven

The beautiful nature, which is surrounding us, is our greatest treasure. This is where we get the energy and power from. Our trout pond and its surrounding paradise is a nice and special place. Kingdom of heaven was it already called in old maps. There is no better name imaginable. The water of the Johanna pond originates in the mountains and is key for the perfect quality. The trout is white, firm and aromatic and therefore well known amongst connoisseurs as one of the most precious fish of our environment.

Roasted trout „Müllerin“ style

The Johanna recipe

A: Salt the trout in- and outside, turn it over in flour, remove the remaining flour
B: Heat butter and roast the trout until it’s crunchy. Pour off the remaining butter, reboil fresh butter until it is fluffy. Add lemon juice and a bit of white wine.
C: Sprinkle the trout with parsley and the butter-lemon-wine blend.

Wine suggestions: Classically, there is served a glass of „Grüner Veltliner“.

· 4 fresh trout (ca. 250 g each)
· 2 lemons / coarse sea salt
· butter for roasting
· wheat flour / ca. 200g of butter
· 1 small bunch of parsley
· a sip of a dry white wine
